Glen Ian Padiyar – EXECUTIVE CHEF

The man behind the flavour. Glen’s been leading the kitchen with serious skill since day one. He brings a wealth of international culinary experience to his role, with a background that spans luxury hotels, private members’ clubs, and award-winning restaurants.

From London to Bahrain, Glen has worked in kitchens that know their way around fine food—earning accolades like 2AA Rosettes and the title of Best Casual Dining Restaurant in Bahrain along the way.

He’s all about bold flavours, fresh ingredients, and making sure every dish that leaves the pass is something to talk about.

SAMUELE LOMBARDI – BAR MANAGER

Samuele brings a mix of charm, hustle and true Italian flair to The Cardinal bar – making sure every guest feels like they’ve walked into somewhere special (and never want to leave).

With a background that spans vibrant hospitality scenes across London and Italy, Samuele knows what great service should feel like – and he delivers it with effortless energy.

A natural people person with an eye for detail, Samuele’s all about creating a warm, relaxed atmosphere while keeping things running like clockwork.

Favourite Dish: Salmon Mie Goreng

VITTORIO BOANO – RESTAURANT MANAGER

A true craftsman of the floor, Vittorio brings precision, passion, and a whole lot of heart to The Cardinal. With years of experience running top restaurants and bars across London, he’s got a sharp eye for detail and a steady hand under pressure.

Now as Restaurant Manager, he keeps the energy high, the service smooth, and the team thriving—making sure every guest experience hits the mark.

Vittorio also leads on all private hire enquiries and ensures every event runs seamlessly from start to finish. If things feel like they’re running effortlessly, chances are, Vittorio’s behind it.

Favourite Dish: Miso Baked Sea Bass (he won’t share with you)

PRINCE ALEXANDER – FLOOR MANAGER

With over 20 years of experience in the hotel industry, Prince has worked his way through a range of roles—from front office to security.

His hospitality journey began at 16, waiting tables and learning the value of connection and service. Known for his strong communication skills and calm presence, Prince ensures everything on the floor runs smoothly. If something’s not quite right, he’s the one who quietly steps in to put it right, keeping the guest experience seamless from start to finish.
